If you talk to my friends or family they will readily agree that I am not a morning person. Nor am I hungry when I first wake up. But since breakfast really is the most important meal of the day it’s important that I still have something.
Smoothies really work for me in the morning. Not only can I prepare it the night before which is a must since - you know - I’m not a morning person, I can make it both tasty and filling.
The ground flax and oats in this blueberry pie smoothie ensures that I’m not ‘hangry’ before lunch. Trust me, this is a good thing.
The dietitian in me is always mindful to add fibre sources to any smoothie. I’m a strong believer in eating the right foods for optimal gut health. That being said, the foodie in me still wants a hint of sweetness. This blueberry pie smoothie is the best of both worlds.
Blueberry Pie Smoothie

Ingredients:
1/3 cup (80mL) gluten-free oats
2 tbsp (30 mL) ground graham cracker crumbs
½ cup (120mL) blueberries, frozen
½ cup (120mL) peaches, frozen
1 cup (240mL) spinach, fresh (optional)
¼ tsp (1 mL) cinnamon, ground
1 cup (240mL) milk
1 date or 1 tsp (5 mL) coconut sugar (optional for added sweetness)
Method:
In a high power blender, pulse oats a few times.
Add remainder ingredients and blend on high.
Scrape sides down with a spatula, and re-blend (on high) until all ingredients (especially spinach) are blended evenly (no chunks).
Pour into a glass and enjoy!
